Book Description
Excerpt from Progressive Medicine, Vol. 3: A Quarterly Digest of Advances, Discoveries, and Improvements in the Medical and Surgical Sciences; September, 1919 The Importance of the Food Factor. It is not generally suspected how largely success will depend upon a judicious diet reform. Meanwhile, science has at last entered upon an analytical study of the varied health giving properties distributed among our vegetable foods. It has long been contended by raw-vegetarians that an adequate proportion of uncooked vegetable food constitutes our best insurance of health, by providing nature's curative foods in their unimpaired efficiency. It is impossible to foretell how far this new path of research may conduct us in identifying fresh etiological types of deficiency disease and of other diseases, and in their prevention and treatment. Vitaminology is gradually extending its list of accessory factors of nutrition. Already it has been proved that the chemical in uence of free alkali and the physical in uences of heat and of dehydration considerably reduce the efficacy of the antiscorbutic factor. Prolonged boiling can abolish it, and it is almost completely destroyed by simple drying. The same also applies to the growth-promoting factor, water soluble B. It is therefore probable that vitamines are of unstable molce ular build; and that for the health purpose, as much of our vegetable supplies as we can enjoy in the raw state should not be cooked; while for the rest we should adopt the method of cooking least destructive of their beneficial action. Book Description
Excerpt from Progressive Medicine, Vol. 4: A Quarterly Digest of Advances, Discoveries, and Improvements in the Medical and Surgical Sciences; December, 1908 All these observers failed to recognize that two factors are concerned in gastric evacuation. One of these is the pressure to which the food at the pylorus is subjected by the recurring peristaltic waves; the other is the action of the pyloric sphincters. Cannon has shown that gastric peristaltic waves of practically the same intensity are continuously run ning, so long as food remains in the stomach. One of the two factors, the pressure in the antrum, is, therefore, recurrently constant; and the control of the discharge must consequently reside with the other factor, the action of the pyloric sphincter. The substance of Cannon's work is the explanation of this action, as well as the differences in the rate of discharge of different foodstuffs from the stomach. It has been shown that when representative carbohydrate, proteid, and fatty foods of uniform amount and consistency are separately fed to an animal, the carbohydrates begin to leave the stomach within ten minutes after ingestion, and are passed out rapidly. Proteids commonly do not leave the stomach at all during the first half-hour, and sometimes not for an hour, and then they are expelled only slowly. Fats, because of a continuous slow exit, remain in the stomach for a long period. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books.
