The results of this test agree in general with the results obtained through the cold-storage experiments of the United States Department of Agriculture as to length of time small fruits may be kept in cold storage. Excerpt from Cold Storage for Tropical Fruits Small purple star apples were picked in a half ripe condition and held for 36 days at 32° F. The skin gradually faded and shriveled after the second week. At the end Of the period the pulp Of the fruit was firm, Of good color and perfect flavor. The same variety, picked ripe, kept well for 30 days, but at the end Of a period Of 57 days had deteriorated in color and appearance externally, while the pulp was still perfect in flavor. Specimens Of the same varieties Of star apples, picked green, half-ripe and ripe were placed in refrigeration at a temperature Of 45° F. For a period Of 40 days. The same changes were Observed as in fruit held at 32° F. The deterioration was somewhat more rapid, however, and molds developed more extensively on skin abrasions. The color of the skin was better preserved at 45° than at 32° F. The texture Of the rind, however, and the texture and flavor Of the pulp were much better in the fruit held at 32° F. Excerpt from Storage of Perishable Fruits at Freezing Temperatures: Preliminary Report Many quickly perishable fruits such as berries, apricots, cherries and others can not be held successfully for very long periods at the usual cold storage temperatures for fruit, of 32° F. To 35° F. Because of rapid softening and decay. If held without preliminary treatment at a temperature of 10° F., low enough to freeze the fruit, there is a tendency in certain fruits for the color to become brown and the flavor seriously impaired. It, therefore, seemed desirable to make a pre liminary experimental study of methods of treating the above fruits before storage, at 10° F. To prevent or minimize undesirable changes in color and flavor. At these low temperatures molding or fermenta tion does not occur and ripening process-es are effectively arrested. Therefore, if the problems of retention of color and retention of flavor could be satisfactorily solved, this method of storage should have wide application. The investigations have included not only experiments upon the storage of various quickly perishable fruits, but also upon the utiliza tion of such fruit in canning, preserving, confections, etc., after Six to ten months storage. The data of the first year's experiments have been so promising that it is believed the results will be of considerable immediate value to cold storage establishments, ice cream manufacturers, fruit pre serving factories, and others. Former breweries are equipped with large refrigerating plants, very large glass lined or wooden tank cold storage capacity, and other facilities which could be used for the receiving, preparation and storage of the types of fruits used in the tests. It is probable that a very extensive market could be quickly developed for such fruits during the winter and early spring months and it is believed that the develo'pment of such an industry offers a very attractive field. The introduction of the refrigerator car and of the cold-storage warehouse, together with the rapid growth of the canning industry, has done much to improve the pear situation by artificially establish ing a well-regulated and more uniform supply of fruit throughout a longer period of time. The pear acreage of the country has more than doubled within a decade, and is enlarging the relative importance of cold storage to the pear-growing business, though a large part of the increase, especially in California, along the Atlantic coast from New Jersey southward, in Texas, and in the Central West, is primarily related to the canning industry.
