This collection of essays provides an overview of new scholarship on recipe books, one of the most popular non-fiction printed texts in, and one of the most common forms of manuscript compilation to survive from, the pre-modern era (c.1550–1800). This is the first book to collect together the wide variety of scholarly approaches to pre-modern recipe books written in English, drawing on varying approaches to reveal their culinary, medical, scientific, linguistic, religious and material meanings. During the mid- to late seventeenth century, women in Irish houses from elite backgrounds started to collect recipes, which they recorded in domestic manuscripts. While these manuscripts were made elsewhere at an earlier date, they were an almost entirely new arrival to Ireland in this period, and their sudden proliferation said much about changes taking place in society at large. This book is a detailed study of such manuscripts from the perspective of historical archaeology, which will argue that they are artifacts which clearly demonstrate that a profound series of changes was taking place. The written word penetrated people’s daily lives and homes to a degree that it had not in previous periods, and it had a profound influence on how they related to their world, objects, and each other. While this book will address how we can use them as sources for the study of food history and material culture, it is ultimately concerned with the meanings of manuscript recipe books, and specifically, what they say about the individuals and society that made them. The proliferation of these manuscripts signaled a profound change not just in cuisine, but also in the way people thought about and related to food as a form of material culture. Ultimately, this book will argue that these manuscripts are not simply excellent records which can tell us about "material culture" within the early modern house, but that they are a profoundly important type of artifact in their own right. Undertaking research that situates textual objects such as recipe books at the very core of historical archaeology is critical to understanding some of the most significant changes that took place in the early modern world.

Across early modern Europe, men and women from all ranks gathered medical, culinary, and food preservation recipes from family and friends, experts and practitioners, and a wide array of printed materials. Recipes were tested, assessed, and modified by teams of householders, including masters and servants, husbands and wives, mothers and daughters, and fathers and sons. This much-sought know-how was written into notebooks of various shapes and sizes forming “treasuries for health,” each personalized to suit the whims and needs of individual communities. In Recipes and Everyday Knowledge, Elaine Leong situates recipe knowledge and practices among larger questions of gender and cultural history, the history of the printed word, and the history of science, medicine, and technology. The production of recipes and recipe books, she argues, were at the heart of quotidian investigations of the natural world or “household science”. She shows how English homes acted as vibrant spaces for knowledge making and transmission, and explores how recipe trials allowed householders to gain deeper understandings of sickness and health, of the human body, and of natural and human-built processes. By recovering this story, Leong extends the parameters of natural inquiry and productively widens the cast of historical characters participating in and contributing to early modern science.

This book is about the relationship of food and food practices to discourses and depictions of domestic and political governance in early modern women’s writing. It examines the texts of four elite women spanning approximately forty years: the Psalmes of Mary Sidney Herbert, Countess of Pembroke; the maternal nursing pamphlet of Elizabeth Clinton, Dowager Countess of Lincoln; the diary of Margaret, Lady Hoby; and Mary Sidney, Lady Wroth’s prose romance, Urania. It argues that we cannot gain a full picture of what food meant to the early modern English without looking at the works of women, who were the primary managers of household foodways. In the late seventeenth and eighteenth centuries, the 'woman writer' emerged as a category of authorship in England. Publishing the Woman Writer in England, 1670-1750 seeks to uncover how exactly this happened and the ways publishers tried to market a new kind of author to the public. Based on a survey of nearly seven hundred works with female authors from this period, this book contends that authorship was constructed, not always by the author, for market appeal, that biography often supported an authorial persona rooted in the genre of the work, and that authorship was a role rather than an identity. Through an emphasis on paratexts, including prefaces, title pages, portraits, and biographical notes, Leah Orr analyses the representation of women writers in this period of intense change to make two related arguments. First, women writers were represented in a variety of ways as publishers sought successful models for a new kind of writer in print. Second, a new approach is needed for studying early women writers and others who occupy gaps in the historical record. This book shows that a study of the material contexts of printed books is one way to work with the evidence that survives. It therefore begins with a very familiar kind of author-centric literary history and deconstructs it to conclude with a reception-centered history that takes a more encompassing view of authorship. In addition to analysis of many little-known and anonymous authors, case studies include Aphra Behn, Catharine Trotter/Cockburn, Laetitia Pilkington, Marie-Catherine d'Aulnoy, and Anne Dacier.

The Structures of Practical Knowledge investigates the nature of practical knowledge – why, how, when and by whom it is codified, and once codified, how this knowledge is structured. The inquiry unfolds in a series of fifteen case studies, which range in focus from early modern Italy to eighteenth century China. At the heart of each study is a shared definition of practical knowledge, that is, knowledge needed to obtain a certain outcome, whether that be an artistic or mechanical artifact, a healing practice, or a mathematical result. While the content of practical knowledge is widely variable, this study shows that all practical knowledge is formally equivalent in following a defined workflow, as reflected in a construction procedure, a recipe, or an algorithm. As explored in the volume’s fifteen contributions, there are three levels at which structures of practical knowledge may be understood and examined. At the most immediate level, there are the individual workflows that encompasses practical knowledge itself. Probing further, it is possible to examine the structure of practical knowledge as it is externalized and codified in texts, drawings, and artifacts such as models. Finally, practical knowledge is also related to social structures, which fundamentally determine its dissemination and evolution into new knowledge structures. The social structures of professionals and institutions represent the critical means by which practical knowledge takes form. These actors are the agents of codification, and by means of selection, appropriation, investment, and knowledge development, they determine the formation of new structures of practical knowledge. On a more abstract level, the creation of new knowledge structures is understood as constituting the basis for the further development of scientific knowledge. Rich in subject matter and incisive in the theory it lays out, this volume represents an important contribution to the history of science and epistemology. Individually, the fifteen case studies – encompassing the history of architecture, mining, brewing, glass production, printing, ballistics, mechanics, cartography, cosmology and astronomy – are replete with original research, and offer new insights into the history of science. Taken together, the contributions remodel historical epistemology as a whole, elucidating the underlining knowledge structures that transcend disciplinary boundaries, and that unite practitioners across time and space.
