La filière laitière qui est encore aujourd'hui encadrée par le système des quotas anticipe le démentèlement des outils de régulation de la production et souhaite se doter d'outils de pilotage de l'exploitation dans un contexte de prix incertain. Le coût de production est un indicateur qui répond à cette demande. Cependant, le mode de détermination du coût de production n'est pas clairement établi ce qui rend cet indicateur peu transparent et limite son utilisation. Aussi, les coopératives laitières et les chambres d'agriculture désirent harmoniser cet outil afin de développer son utilisation. Ce mémoire recense les différentes possibilités de calcul du coût de production du lait et propose une méthode applicable à des exploitations ayant différents niveaux de diversification. La difficulté de l'établissement d'une méthode est liée à la complexité du fonctionnement d'une exploitation agricole et a fortiori d'une exploitation laitière. La première difficulté réside dans l'isolement de l'atelier considéré, la seconde dans l'identification des charges relevant de cet atelier atelier et dans le choix des clés de répartition lié à cette identification. Enfin, certains postes sont très variables d'une exploitaion à une autre. L'alimentation du troupeau relève d'un choix stratégique de l'éleveur et doit faire l'objet d'une attention particulière. De même, le mode de calcul et la durée des amortissements ont un fort impact dans le coût de production. L'harmonisation des méthodes de calcul du coût de production dépendra de la volonté et des intérêts des acteurs à utiliser une méthode de calcul commune.
