Ils ne sont pas seulement présents dans notre assiette, mais font également partie de l'actualité. La France est le quatrième pays producteur de l'Union européenne de fruits et légumes en surfaces et le troisième pays producteur en volume. On compte plus d'une cinquantaine de fruits et légumes cultivés en France, ce qui en fait un secteur très hétérogène, aussi bien au niveau de la production qu'au niveau des débouchés. La constitution d'une véritable unité de la production n'est pas évidente et ces dernières années, la filière a notamment vu s'instaurer une concentration de la grande distribution, face à des producteurs éclatés. Les pouvoirs publics et les acteurs de la filière se sont mobilisés pour tenter de renforcer l'offre. Par ailleurs, l'opinion publique concède aux fruits et légumes des vertus incontestables pour la santé, mais est aussi de plus en plus exigeante en termes de qualité sanitaire, avec plus de la moitié de la production destinée au frais, c'est-à-dire «directement consommable », et de qualité environnementale, avec des cultures consommatrices d'énergie, d'eau et de produits phytosanitaires. Enfin, les produits phytosanitaires sont au cœur de débats d'actualité, avec une réglementation de plus en plus stricte et l'émergence de nombreuses contraintes, principalement au niveau des résidus. Les fruits et légumes sont directement concernés et voient l'émergence de nombreuses contraintes quant à la conduite des cultures. Nous verrons dans ce mémoire l'importance d'une implication des différents acteurs pour trouver des solutions viables techniquement, économiquement et socialement.

It is estimated that literally billions of residents in urban and peri-urban areas of Africa, Asia, and Latin America are served by onsite sanitation systems (e.g. various types of latrines and septic tanks). Until recently, the management of faecal sludge from these onsite systems has been grossly neglected, partially as a result of them being considered temporary solutions until sewer-based systems could be implemented.
