La presente obra ofrece los resultados obtenidos tras entrevistar a 106 egresados del programa educativo de Quimico en Alimentos de la Universidad Autonoma del Estado de Mexico, que laboran en el Valle de Toluca, sobre el proceso de insercion laboral. Se fundamenta en el analisis del contexto socioeducativo y economico, teorias y conceptos de calidad educativa, empleabilidad y en el estudio de las transiciones. En la metodologia se utilizo un enfoque empirico analitico y se diseno y aplico un instrumento que recogio la opinion de egresados de este programa. Los resultados indican el proceso de transicion del egreso al mercado laboral. Por tanto, con el proposito de favorecer esta transicion al mercado laboral desde el enfoque de las transiciones, se proponen algunas lineas para el seguimiento de los profesionales y la implementacion de un programa de insercion laboral con estrategias como la conformacion de equipos interdisciplinarios y el establecimiento de una red de informacion."

Based on twenty case studies of universities worldwide, and on a survey administered to leaders in 101 universities, this open access book shows that, amidst the significant challenges caused by the COVID-19 pandemic, universities found ways to engage with schools to support them in sustaining educational opportunity. In doing so, they generated considerable innovation, which reinforced the integration of the research and outreach functions of the university. The evidence suggests that universities are indeed open systems, in interaction with their environment, able to discover changes that can influence them and to change in response to those changes. They are also able, in the success of their efforts to mitigate the educational impact of the pandemic, to create better futures, as the result of the innovations they can generate. This challenges the view of universities as "ivory towers" being isolated from the surrounding environment and detached from local problems. As they reached out to schools, universities not only generated clear and valuable innovations to sustain educational opportunity and to improve it, this process also contributed to transform internal university processes in ways that enhanced their own ability to deliver on the third mission of outreach

Food choices and eating habits are learned from many sources. The school environment plays a significant role in teaching and modeling health behaviors. For some children, foods consumed at school can provide a major portion of their daily nutrient intake. Foods and beverages consumed at school can come from two major sources: (1) Federally funded programs that include the National School Lunch Program (NSLP), the School Breakfast Program (SBP), and after-school snacks and (2) competitive sources that include vending machines, "a la carte" sales in the school cafeteria, or school stores and snack bars. Foods and beverages sold at school outside of the federally reimbursable school nutrition programs are referred to as competitive foods because they compete with the traditional school lunch as a nutrition source.
