Three feedlot experiments evaluated the effects of added urea to finishing diets containing less than 20% WDGS. In Exp.1, a significant interaction was observed for G:F between urea concentration and distillers concentration in the diet. Feeding urea in diets with 10% WDGS had no significant impact on animal G:F. Urea included in diets with 15% WDGS had a quadratic impact on G:F with urea included at 0.5% of diet DM having the greatest performance. When adding urea to diets containing 20% WDGS, a quadratic impact on G:F was observed where urea included at 0.5% of diet DM reduced G:F. In Exp. 2 there were no interactions between urea concentration and WDGS concentration. Increasing concentration of WDGS in the diet improved G:F by 4.7%. The addition of urea to the diet had minimal impact on performance although cubic effects of urea inclusion were observed suggesting variation in the data. For Exp. 3 no difference was observed, for either urea concentration or WDGS concentration in the diet, however, DMI was reduced when urea was included in the diet at 1.2%.Two experiments evaluated the effects of the addition of yeast extracted solubes (EXP) and yeast to finishing diets on performance, carcass characteristics, and nutrient metabolism. In Exp. 1, feeding increased EXP in the diet resulted in quadratic effects on performance with what appears as a linear decrease up to 15% EXP is included followed by a dramatic increase at 20% inclusion. Feeding similar concentrations of EXP when compared to conventional condensed distillers solubles (CONV) reduced animal performance. However, when yeast (YST) was added back to the EXP, performance is similar to CONV. Adding YST alone does not improve performance over the corn control. All concentrations of EXP and CONV performed worse than the corn control. In Exp. 2 no effects on measured nutrient digestibility were observed. However, DM intake and excretion were affected with tendencies for OM, NDF, ADF, and starch intakes to be affected. Digestible energy intake in Mcal/kg and TDN were affected by diet and appeared to follow similar patterns as the performance trial perhaps explaining the observed performance response.

A finishing experiment evaluated the effect of incremental supplemental rumen-protected lysine on beef cattle performance. All cattle were fed the same diet of high moisture corn, dried rolled corn, modified distillers grains plus solubles, corn silage, and supplement with inclusion levels of lysine ranging from 0 to 7 grams/day, in 1 g increments. Dry matter intake (P ≤ 0.04) and ADG (P ≤ 0.04) decreased linearly as supplemental lysine increased in the diet with no effect on final carcass adjusted feed efficiency (P ≥ 0.34). In the initial 64 days of the experiment, increasing lysine in the diet linearly decreased ADG (P ≤ 0.05) with a trend (P = 0.08) to linearly decrease feed efficiency. During the Optaflexx feeding period, DMI decreased linearly (P ≤ 0.01) with no effect on carcass adjusted ADG (P ≥ 0.51) or feed efficiency (P ≥ 0.34). Hot carcass weight tended to decrease linearly (P = 0.07) with no significant differences in carcass quality characteristics (P ≥ 0.20). In diets containing 15% modified distillers grains plus solubles, increasing supplemental lysine in the diet did not improve performance of finishing cattle. A finishing experiment evaluated the effect of a pistachio shell-sourced biochar on emissions and finishing performance of beef cattle. All cattle were fed the same diet of dried rolled corn, Sweet Bran (Cargill Wet Milling, Blair, NE), wheat straw, and supplement with biochar replacing 0.5% of dried rolled corn in the biochar treatment group. Eight pens of cattle were rotated as pairs through a 2-chambered emissions barn for 5 days for 8 consecutive weeks to analyze CH4 and CO2 produced by the cattle (2 measurement periods per pair). Biochar tended to increase CH4 emissions on a g/day basis (P = 0.09) with no effect on CH4 emissions as g/kg of DMI. There were no statistical differences in CO2 emissions as g/day or g/kg of DMI. Final performance, HCW, LM area, and marbling, did not differ between treatments (P ≥ 0.23). However, the control group tended to have improved 12th rib fat (P = 0.07) and yield grade (P = 0.06) compared to the biochar group. Including biochar at 0.5% of diet DM did not reduce eructed CH4 or respired CO2 and did not improve performance.

Abstract: Jersey cattle are recognized as being slower growing and having more yellow fat compared with other breeds, thus limiting the use of this breed for beef production. Because Jerseys are slower growing, they require additional time on feed to achieve acceptable market weights and yield acceptable hot carcass weights. Although Jerseys face challenges, the resulting product has other quality aspects that exceed the general beef population. Gaps in knowledge exist regarding the optimum forage level in finishing diets on growth performance, carcass characteristics, and beef palatability. The objective of this study was to evaluate the effects of forage level (12 vs. 24% sudangrass:alfalfa hay, DM-basis) in steam-flaked, corn-based finishing diets on carcass characteristics, palatability, and retail color stability of Jersey beef. Seventy-nine Jersey steers were blocked by weight and randomly assigned one of the following treatments for a 385-d trial period: Jersey low- 12% (JL; n = 38) or Jersey high- 24% (JH; n = 39) forage, DM-basis. Forty-eight hours postmortem (PM), strip loins were removed, vacuum-packaged, and aged at 3°C for 18 d PM. Following the aging period, steaks from the longissimus muscle were sliced, vacuum-packaged, and frozen ( -20°C) until analyzed. Steers fed the low forage diet had greater (P 0.05) backfat and tended to have greater dressing percent compared to steers fed the high forage diet. Live weight, HCW, LMA, and USDA Yield Grade were not affected (P 0.05) by forage level. A high moisture corn/soybean meal-based finishing ration was used to examine the effects of roughage source (corn silage, alfalfa hay), level of dietary roughage (8, 16, 24%), and ractopamine supplementation (none, Optaflexx) on growth performance, carcass traits, and beef quality for finishing 108 steers and 24 heifers (initial BW = 308 kg). Cattle were allocated by gender to 12 management regimen subclasses. Optaflexx (trade name for ractopamine hydrochloride) was fed over the last 28 d on feed with cattle marketed after common days on feed. Growth performance (ADG, feed intake, and feed efficiency) and carcass traits were assessed on an individual animal basis. A primal rib and semitendinosus (ST) muscle from each animal were processed at the University of Guelph Meat Laboratory for carcass and meat quality evaluations. Tenderness was determined using shear force assessment of product aged 7, 14, and 21 d. Average daily gains were similar (P > 0.27) across main effects while use of corn silage as the roughage source decreased (P 0.001) dry matter intake and improved (P 0.001) feed efficiency compared to feeding alfalfa hay. Roughage level and beta agonist supplementation did not affect (P 0.13) dry matter intake or feed efficiency. When the last 28 days on feed were examined, Optaflexx supplementation increased (P 0.001) weight change, ADG, and improved feed conversion, while DMI remained unchanged (P 0.373). Carcass traits including hot carcass weight, grade fat, longissimus muscle area, marbling, and body composition as assessed by rib dissection (% lean, fat, bone) were not affected (P 0.14) by roughage level, source, or use of Optaflexx. Fat partitioning and liver abscess scores were unaffected (P > 0.09) by source and level of roughage fed, and use of Optaflexx. Source and level of dietary roughage did not affect color (P > 0.21) or shear force (P > 0.20) values for longissimus (LM) and semitendinosus (ST) steaks. Lower DMI and better feed conversion can be achieved using corn silage as the roughage source, while inclusion of up to 24% roughage in finishing diets may not negatively impact gains, carcass characteristics or beef quality. Beef producers may be able to increase amounts of roughage in the diet to lower cost of production without compromising growth performance and carcass and meat quality.

A total of eight experiments utilizing 572 finishing pigs were conducted to evaluate the effect of reducing dietary protein level and adding amino acids on pig performance, carcass characteristics, and N excretion. The valine requirement of early-finishing (50 to 80 kg) barrows and the effect of adding isoleucine (Ile) and valine (Val) in amino acids fortified low-protein diets on finishing pig performance were also evaluated. In the first experiment (Exp. 1 of Chapter II), it was determined that the CP level in the diet for early-finishing (50 to 80 kg) gilts can be reduced up to four percentage units by adding Lys, Thr, Trp, and Met, with no detrimental effect on pig performance or carcass characteristics. The second study (Exp. 2 of Chapter II) indicates that Ile and/or Val may be limiting in a four-percentage-unit-protein-reduced diet for late-finishing (80 to 120 kg) gilts. The third experiment (Exp. 1 of Chapter III) indicates that the true digestible Lys requirement of early-finishing PIC barrows is not higher than 0.70%. In the fourth experiment (Exp. 2 of Chapter III), it was demonstrated that dietary protein level for early-finishing PIC barrows can be reduced up to five percentage units by adding Lys, Thr, Trp, Met, and Ile, with no detrimental effect on pig performance or carcass characteristics. Valine was not limiting in a 10.49% CP diet for early-finishing PIC barrows with ADFI of 3.1 kg/d, and the true digestible Val requirement of early-finishing PIC barrows gaining 1.0 kg/d, was not greater than 11.4 g/d. In the fifth experiment (Exp. 3 of Chapter III), we found that decreasing dietary protein level by 4.81 percentage units and adding amino acids to the diet reduced N excretion of early-finishing barrows by 40.6%. In the sixth experiment (Exp. 4 of Chapter III), it was determined that the dietary protein level for early-finishing barrows can be reduced up to four percentage units by adding Lys, Thr, Trp, and Met, with no detrimental effects on pig performance or carcass characteristics, and reducing dietary protein level by four percentage units can reduce N excretion by 38.4%. In the seventh experiment (Exp. 1 of Chapter IV), it was determined that late-finishing barrows fed an amino acid (Lys, Thr, Trp, Met, Ile, and Val) fortified corn diet (7.92% CP) have similar performance and carcass characteristics as pigs fed a corn-soybean meal control 12.50% CP diet. Deleting Ile or Val in an amino acids fortified corn diet may decrease pig performance. In the eighth experiment (Exp. 2 of Chapter IV), it was determined that late-finishing gilts fed an amino acid (Lys, Thr, Trp, Met, Ile, and Val) fortified corn diet (9.55% CP) have similar performance and carcass characteristics as pigs fed a corn-soybean meal control 15.17% CP diet. Decreasing dietary CP level from 15.17 to 9.55% decreases N excretion of late-finishing pigs by 48.28%. Deleting Ile or Val in an amino acid fortified corn diet may decrease pig performance. In summary, finishing pigs fed a low protein diet properly fortified with crystalline amino acids can have similar performance and carcass characteristics as pig fed typical protein level corn-soybean meal control diets, and N excretion will be greatly reduced.
