The purpose of this report was to compare the levels of various persistent pollutants in the blood and hair samples of people who ate sport fish with the levels of pollutants in the control group of people who did not eat sport fish. While the main focus of the study was on fish consumption, the study also looked at wildlife consumption. Some toxic chemicals of concern in sport fish and wildlife are persistent organochlorine chemicals such as PCBs, dioxins and furans and the pesticides DDT (and DDE), HCB and mirex. Another important contaminant is mercury, which is a heavy metal. Biomarkers (such as liver enzymes in blood), which may be early warning indicators of exposure to contaminants, were also measured. However, biomarkers can also reflect other health problems.

The study examined the relationship of fish & wildlife consumption with levels of persistent environmental contaminants and selected biomarkers found in blood, hair, and urine samples. Sport fish & wildlife consumption data, and information on potential confounders, were determined using an interviewer-administered questionnaire involving 232 fish-eaters and controls from Cornwall and Mississauga. Blood & hair samples were analyzed for such contaminants as polychlorinated biphenyls, organochlorine pesticides, dioxins, and heavy metals; biomarkers such as enzymes were measured in serum & urine samples. Results are presented with regard to participant demographics, type & amount of fish & wildlife consumed, other exposures & potential confounding variables, and environmental contaminant & biomarker levels, with comparisons to results from other studies and to levels associated with adverse health effects. Appendices include copies of the questionnaire used and details of the biological sample collection & analytical methods.
