Les résidus lipidiques sont des rejets très concentrés, traités par des bioréacteurs à alimentation séquentielle. Ces procédés subissent des dysfonctionnements importants et chroniques, liés en particulier à l'apparition de mousse. Nous avons étudié les mécanismes physiques, chimiques et biochimiques inhérents à la dégradation de ces résidus afin de proposer des stratégies de conduite des procédés, fiabilisant le traitement. Majoritairement composées d'acides gras longues chaînes, les graisses de consistance pâteuse vont se répartir aux interfaces eau/air et eau/flocs biologiques. Dans le mode de fonctionnement du procédé industriel (pH 7, Substrat/Micro-organismes (S/X) de l'ordre de 0,1 g/g), plus de 97% des graisses sont adsorbées sur la biomasse et devront se solubiliser par un processus pH?dépendant (pKa = 8) pour être assimilées par les micro-organismes. La cinétique de dégradation est ainsi limitée par la solubilisation de ces graisses et s'apparente à une réaction d'ordre 1 (k = 0,5 j-1, T = 25ʿC). L'étude du moussage en fonction de facteurs déterminants pH, S/X et [graisses]solubles a permis d'identifier deux mécanismes distincts de formation de la mousse qui sont un moussage de type savons et un moussage stabilisé par la biomasse. Le pouvoir moussant et les facteurs déclenchants de ces mousses ont été déterminés, ce qui nous a permis de proposer, à l'aide d'une modélisation adaptée, différentes stratégies opératoires (alimentation continue, conditionnement des graisses) pour assurer un fonctionnement fiable vis-à-vis du moussage (pH
