Book Description
Biotechnology in its many guises has developed very considerably over the last few years. We now feel that it is appropriate for the publication of a series of books that discuss the technical aspects of biotechnology specifically as applied to foods, and in particular concentrating on new and emerging techniques, processes and products. Food is without doubt one of the oldest bioindustries; however, some of the new areas of biotechnology, such as diagnostic and health-care applications, are likely to mature much faster than applications in the food industry. Eventually, however, biotechnology must have a very great impact on a wide scale in the food industry, simply because of the size and diversity of the industry, and because most food products are substantially natural in origin and are therefore very suitable for processing by biocatalysts. Some of the ways in which the food industry is likely to be affected by developments in biotechnology include the following: The modification of food components to give products with new and/or improved properties, for instance high fructose corn syrups, and by modifying the functional properties of proteins. New methods of assaying food constituents, such as immobilized enzyme sensors. New processes for the production of foods and food components, for instance the use of plant cell cultures for the production of flavours. Many of these topics will be described in detail in this series of books.

Book Description
Over the period of last two decades, there has been significant resurgence in solid-state fermentation due to the numerous benefits it offers, especially in the engineering and environmental aspects. SSF has shown much promise in the development of several bioprocesses and products. This resurgence gained further momentum during the last 5-6 years with the developments in fundamental and applied aspects. A good deal of information has been generated in published literature and patented information. Several commercial ventures have come up based on SSF in different parts of the world. The contents are organized into four parts: Part 1 deals with the General and Fundamentals aspects of SSF; Part 2 deals with the production of bulk chemicals and products such as enzymes, organic acids, spores and mushrooms in SSF; Part 3 is on the use of SSF for specialty chemicals such as gibberellic acid, antibiotics and other pharmaceutically valuable secondary metabolites, pigments, and aroma compounds; Part 4 deals with the use of SSF miscellaneous application such as SSF for food and feed applications, agro-industrial residues as substrates in SSF and the production of silage and vermicompost.

Book Description
Excerpt from The Production of Organic Acids by Fermentation: The Technical Literature and Patents of the U. S. Department of Agriculture The demand for greater quantities of organic acids, such as citric, fumaric gluconic, and lactic, for the preparation of foods, plastics, or pharmaceuticals, and the resultant need for added knowledge of their production are continually increasing. The fermentative production of these acids has been studied for a number of years by workers in the Uhited States Department of'agriculture and is now fairly well perfected. In addition to this work, new acids are being discovered and produced in quantity. Their total potentialities have hardly been revealed; but continued research would appear to assure uses fbr 2 and S-ketogluconic, a-ketoglutaric, malto and lacto bionic, kojic, and itaconic acids. The last-nemed acid, fer example, is already becom ing a valuable asset in the field of plastics. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books.
