The total acreage of prunes in 1925, exclusive of the plantings of that year, was acres, of which per cent was in bearing. The production in 1925 amounted to dry tons and, as the more recent plantings come into bearing, the annual production will increase considerably.' Unlike most fruits, prunes are rarely sold or canned fresh but are marketed almost entirely in the dried form. Therefore, drying is a most important operation and the profitable production of dried prunes is dependent on successful drying of the cr0p. Excerpt from Utilization of Surplus Prunes Even if production in Europe does not increase, according to Shear we may expect an average annual world production of tons of dried prunes for the next few years. Approximately this quantity was produced in 1927 when the world's prune crop was marketed only with great difficulty and at very low prices. A study of the situation indicates. That during the present period of heavy production, prunes of poor quality and very small. Size should not be permitted to compete directly with those of the better grades and sizes, but should instead be diverted to other and non competitive uses. There is, moreover, reason to believe that the consumption of the French variety of prunes could be considerably increased if a more satisfactory method of canning prunes ready-to serve4 could be found and the present technical difficulties of the canning process overcome.
