The young plants removed in thinning are excellent cooked in the same manner as spinach. Take up the roots in 'october and store in cellar like potatoes. Covered with sand they will keep in nice, tender condition for winter use. One ounce will sow 50 feet of drill; 5 to 6 pounds are required for an acre.
