I feel very highly honoured by having been asked by the organisers of this meeting to address you. It is not an easy thing to do. I have to speak to representatives of the highest culture of France and to fellow citizens active and able in the prosecution of all branches of learning. A teacher. Must carefully consider what he says to his pupils; a scientific worker does not, without a good deal of thought, lay his views before his colleagues, but habit enables us to do these things without much embarrassment. It is more difficult to address such an audience as this on a very special scientific subject. I can only hope that those of you who are acquainted with stereochemistry may not think that I treat Pasteur' 3 great work in too slight a way, and that I may not be intolerably tedious to those of you Whose studies have not led them in that direction. Perhaps I should apologise to our French visitors for addressing them in English, but I do indeed believe that mutual intelligibility will be better attained if I use the language with which I am most familiar. Excerpt from The Foundations of Stereo Chemistry: Memoirs by Pasteur, Van't Hoff, Lebel, and Wislicenus Stereo-chemistry, or as it has sometimes been called. Chemistry in space, or Geometrical chemistry, is that branch of chemistry in which the relative position of the atoms in space is taken into consideration. The stereo-chemical theories, like most useful scientific theories, are the result of the necessary expansion of the older views to explain newly discovered facts. The plane structural formulas based upon conceptions of simple atom linking without regard to the actual arrangement of the atoms with respect to one another, were for a time sufficient to meet the requirements of the known facts. While chemists recognized that the atoms of the molecule must have some definite arrangement with respect to one another, it was believed by most chemists that an actual knowledge of this arrangement lay wholly outside of the field of experimental study. The first suggestion leading to the views now held came from Pasteur, (See Pasteur's article here given) in 1860 when he stated that the difference between the active tartaric acids must be due to the asymmetric nonsuperposable character of their molecules. In 1873 Wislicenus, after a thorough study of the active lactic acid derived from meat and the inactive lactic acid from milk, announced that the difference between these two acids must be accounted for by a difference in the arrangement of their atoms in space. The first definite suggestion as to what this arrangement might be was made by van't Hoff in a Dutch pamphlet (here translated) published in September, 1874. Almost at the same time, in November, 1874, LeBel published a paper (here translated) in which he developed, independently, essentially the same views. Excerpt from The Life of Pasteur Pasteur to the sure ground on which we now stand. Starting as a pure chemist, and becoming interested in the science of crystallography, it was not until his life at Lille, a town with important brewing industries, that Pasteur became interested in the biological side of chemical problems. Many years before it had been noted by qagniard-latour that yeast was composed of cells capable of reproducing themselves by a sort of budding, and he made the keen suggestion that it was possibly through some effect of their vegetation that the sugar was transformed. But Liebig's view everywhere prevailed that the ferment was an alterable, organic substance which exercised a catalytic force, transforming the sugar. It was in August, 1857, that Pasteur sent his famous paper on Lactic Acid Fermentation to the Lille Scientific Society; and in December of the same year he presented to the Academy of Sciences a paper on Alcoholic Fermentation, in which he concluded that the deduplication of sugar into alcohol and carbonic acid is cor relevant to a phenomena of life. These studies had the signal effect of diverting the man from the course of his previous more strictly chemical studies. It is interesting to note how slowly these views dislocated the dominant theories of Liebig. More than ten years after their announcement I remember that we had in our chemical lectures the catalytic theory very fully presented.
