Book Description
Antioxidants inhibit the formation and spread of free radicals which can be damaging in biological systems. Free radicals form in biological systems through metabolism, but it is also realized that exogenous environmental sources, such as radiation, food, and drugs, contribute significantly to the generation of free radicals in biological systems. Being reactive species, free radicals are short-lived and do not travel far from cellular targets. Their concentration in biological systems is very low and is difficult to detect directly by electron spin resonance spectroscopy (ESR). Indirect methods of reactions of radicals with specific biomolecules are also sufficiently sensitive to detect quantitatively their presence. Thus the response of antioxidant defenses which react with radical species, can serve as an indirect measure that free radicals have been formed. Redox-based antioxidants change their oxidation state and antioxidants become free radicals themselves. Often, however, the antioxidants give rise to more persistent free radicals, sometimes owing to delocalization of the lone electron around ring structures (in vitamin E, ubiquinones, and certain carotenes). Persistent free radicals react only rarely and the precursors often can be regenerated in biological systems. In recent years, it is becoming clearer from biochemical studies on how the major lipophilic antioxidants work. Particular attention has been given to vitamin E and quinones found in animal and plant membranes and in carotenoids, for the protection of membranes in lipoprotein systems. Flavonoids form another rich and varied source of natural antioxidants.

Book Description
This book provides a comprehensive reference guide to plant-derived antioxidants, their beneficial effects, mechanisms of action, and role in disease prevention and improving general health (anti-ageing effect). The content is divided into three main parts, the first of which covers various antioxidants (such as polyphenols, carotenoids, tocopherols, tocotrienols, glutathione, ascorbic acid), their origins, plant biochemistry and industrial utilization. In turn, the book’s second, main part focuses on antioxidants’ beneficial health effects, explains biochemical fundamentals such as the free radical theory and oxidative stress, and discusses antioxidants’ role in e.g. cancer, cardiovascular diseases, inflammation, degenerative diseases and ageing. The third part reviews general laboratory methods for antioxidant screening, preservation and determination. Written by an international team of experts, this highly interdisciplinary book will benefit a broad range of health professionals and researchers working in biochemistry, biotechnology, nutrition, plant science and food chemistry. It offers an indispensable, up-to-date guide for anyone interested in antioxidants and the role of a plant-based diet in disease prevention and control

Book Description
Free radicals and other reactive oxygen species are constantly formed in the human body and have been implicated in human diseases such as cancer, atherosclerosis, rheumatoid arthritis, Parkinson's disease, and malaria. This observation has raised the possibility that antioxidants could act as prophylactic agents. However, it remains to be fully established whether oxidative stress makes a significant contribution to the pathology of a given disease or whether it is an epiphenomenon. Indeed, development of specific assays applicable to humans would greatly contribute to our understanding of the role played by free radicals and their modulation by antioxidants in normal physiology and in human diseases. This book addresses the key methodological questions.

Book Description
Nutrition and Health: Topics and Controversies explores in detail the relationship between diet, nutritional status, and disease, and evaluates nutritional practices intended to minimize the incidence of and slow the progress of major chronic illnesses. National trends in nutritional awareness and the resulting changes in consumer behavior are discussed. Unlike other books on this subject, the authors take a stand on controversial issues in the field and document their positions with scientific data. Nutrients such as calcium, vitamin E, selenium, and antioxidants, their importance in overall nutrition, and their role in specific diseases are covered. Expertise in nutritional science is not required to gain the highly practical information in this book.

Book Description
First published in 1943, Vitamins and Hormones is the longest-running serial published by Academic Press. In the early days of the serial, the subjects of vitamins and hormones were quite distinct. The Editorial Board now reflects expertise in the field of hormone action, vitamin action, X-ray crystal structure, physiology, and enzyme mechanisms. Under the capable and qualified editorial leadership of Dr. Gerald Litwack, Vitamins and Hormones continues to publish cutting-edge reviews of interest to endocrinologists, biochemists, nutritionists, pharmacologists, cell biologists, and molecular biologists. Others interested in the structure and function of biologically active molecules like hormones and vitamins will, as always, turn to this series for comprehensive reviews by leading contributors to this and related disciplines.
