Quality is a composite term encompassing many characteristics of foods. These include color, aroma, texture, general nutrition, shelf-life, stability, and possible presence of undesirable constituents. Aerobic endospore-forming bacteria are found in soils of all kinds, ranging from acid to alkaline, hot to cold, and fertile to desert.
