The seminar on "The application of NMR techniques on the body composition of live animals", was held on 14 - 15 lune, 1988 at the Bundesforschungsanstalt für Landwirtschaft (FAL), Institut für Tierzucht und Tierverhalten, Mariensee, Germany. This was the third in aseries of meetings organized in the framework of the European Communities (EC) programme for the coordination of agricultural research. The earlier meetings were on "In vivo estimation of body composition", in 1981 in Denmark, and "In vivo measurements of body composition in meat animals", in 1983 in the UK.. The emphasis of the Mariensee meeting on the application of nuclear magnetic resonance techniques benefitted greatly from new equipment just installed at the Institute. Furthermore it was made clear that this type of large-scale facility, which is not readily found elsewhere, could be made available to promote international collaboration in animal science. After discussing the basic principles of the NMR technique and comparing it with alternative, non-destructive methods of body composition analyses, the programme of the Mariensee group was discussed. The obvious advantages of the NMR technique were acknowledged and will clearly have to be weighed against the rather high investment costs for the equipment at present.

"Livestock production systems will only be sustained in the long term if their products continue to meet the demand of consumers. The quality of ruminant carcasses, meat and meat products is of predominant importance in a competitive market where consumers tend to have a preconceived idea about the criteria that define meat quality such as flavour, tenderness, juiciness, smell, colour and texture. The carcass evaluation could be interesting as a precocious classification of the final quality of meat coming from each carcass. Today the quality characteristics of the meat must be different according to its utilisation (supermarket, butcher, catering, refectory, etc.) and so it is very important to choose very early the final destination of the carcass. Obviously, the carcass classification must correlate with meat quality characteristics required by final consumer. Other important factors that have to be taken into account in order to maintain a demand for ruminant meat are safety and traceability. This book reviews the historical and recent developments for carcass evaluation and grading for meat quality assessment in beef and sheep. It places special emphasis on new concepts and approaches to define carcass and meat quality and on the use of modern technologies for composition and quality evaluation. Feedstuff Evaluation contains the proceedings of the 50th University of Nottingham Easter School in Agricultural Sciences, held at Sutton Bonington in July 1989.
