Stunting affects 160 million pre-school children around the world, and imposes significant costs on a child’s health, cognitive development, schooling and economic performance. Stunting in early childhood has been linked to poor dietary diversity, notably low intake of animal-sourced foods (ASFs) rich in high quality protein and other growth-stimulating nutrients. Surprisingly, however, very little economic research has focused on ASFs and child growth. In this paper we redress this omission through an analysis of 112,553 children aged 6-23 months from 46 countries. We first document distinctive patterns of ASF consumption among children in different regions, particularly highly variable patterns of dairy consumption, low consumption of eggs and meat, and surprisingly frequent consumption of fish in several poor regions of Africa and Asia. We then examine how ASF consumption is associated with child stunting in multivariate models saturated with control variables.

Animal products are good source of disposable income for many small farmers in developing countries. In fact, livestock are often the most important cash crop in many small holder mixed farming systems. Livestock ownership currently supports and sustains the livelihoods of rural poor, who depend partially or fully on livestock for their income and/or subsistence. Human population growth, increasing urbanization and rising incomes are predicted to double the demand for, and production of, livestock products in the developing countries over the next twenty years. The future holds great opportunities for animal production in developing countries. Animal Sourced Foods for Developing Economies addresses five major issues: 1) Food safety and nutritional status in developing world; 2) the contribution of animal origin foods in human health; 3) Production processes of animal foods along with their preservation strategies; 4) functional outcomes of animal derived foods; and finally, 5) strategies, issues and polices to promote animal origin food consumption. Animal sourced food contain high biological value protein and important micronutrients required for optimal body functioning but are regarded as sources of fat that contribute to the intake of total and saturated fatty acids in diet. The quality of protein source has a direct influence on protein digestibility, as a greater proportion of higher quality proteins is absorbed and becomes available for bodily functions. Animal foods has high quantity and quality of protein that includes a full complement of the essential amino acids in the right proportion. Land availability limits the expansion of livestock numbers in extensive production systems in most regions, and the bulk of the increase in livestock production will come from increased productivity through intensification and a wider adoption of existing and new production and marketing technologies. The significant changes in the global consumption and demand for animal source foods, along with increasing pressures on resources, are having some important implications for the principal production systems. In this book, contributors critically analyze and describe different aspects of animal’s origin foods. Each chapter is dedicated to a specific type of food from animal source, its nutritional significance, preservation techniques, processed products, safety and quality aspects on conceptual framework. Special attention is given to explain current food safety scenario in developing countries and contribution of animal derived food in their dietary intake. Existing challenges regarding production, processing and promotion of animal’s origin foods are also addressed with possible solutions and strengthening approaches.

Agricultural development has historically focused on poverty reduction and food security but is now increasingly asked to help improve nutrition. Despite this strengthened nutritional mandate, agricultural policies and programs have struggled to develop effective, scalable and cost-effective approaches for reducing undernutrition. This study was therefore undertaken to assess more the more strategic issue of how to re-design agricultural development strategies for greater nutritional impact. To do so we review the literature on agriculture-nutrition linkages through an economic lens, focusing on systemic agriculture-nutrition linkages that go beyond the much-explored question of how a farm family’s agricultural activities affect their own household members’ food consumption or nutrition outcomes. To that end we structured this review around three types of linkages between agriculture and nutrition: (i) agricultural income effects (including income stability); (ii) relative food price determination (including the shadow prices involved in consuming one’s own production); and (iii) agricultural livelihood characteristics (encompassing the many neglected dimensions of agricultural activities and rural livelihoods that influence nutrition and health). For each of these literatures we reflect upon relevant economic theory, methodological challenges, and key empirical evidence. We conclude with a brief discussion of the implications of these findings for developing more nutrition-sensitive agricultural development strategies.

In 2015, the 193 Member States of the United Nations adopted the Sustainable Development Goals (SDGs) to guide development actions of governments, international agencies, civil society and other institutions over the next 15 years (2016–2030). This volume presents selected issues in the complex and diverse science of animal husbandry. The use of computer programs provides an opportunity to improve breeding and optimize farm management. At the same time, the use of traditional breeding methods is also of decisive importance. Knowledge of animal welfare and animal wellness is of great help in controlling animal health issues and in economic production. In the biological processes of reproduction of dairy cows, the events of the 100 days after calving are of fundamental importance. Production systems influence the process of product production, in which the relationship between animal products and human health goes far beyond animal husbandry, and to which the issue of greenhouse gases is also connected. The quality of manufactured meat products is influenced by both on-farm and off-farm factors, but good meat cannot be produced from low-quality animals, even with excellent slaughterhouse work. Background knowledge of animal health ‒ including the microbiome in the digestive tract, which makes use of the feed ‒ makes this activity more effective, which is of particular importance in the case of broiler chickens. Knowing the behavioural characteristics of animals (rams) enables better management. Many horse breeds are capable of artificial gaits as a result of breeding and selection processes. Comparative knowledge of the movements of these horse breeds also helps to understand their differences. The quality of life of animals and the quality of manufactured products are also affected by polycyclic aromatic hydrocarbons from the environment, which, being stored and enriched in fat-containing tissues, can also have adverse effects on the human consumer. Each topic presented not only offers specialist knowledge but makes interesting reading in its own right.

A growing number of governments, donor agencies, and development organizations are committed to supporting nutrition-sensitive agriculture (NSA) to achieve their development goals. Although consensus exists on pathways through which agriculture may influence nutrition-related outcomes, empirical evidence on agriculture’s contribution to nutrition and how it can be enhanced is still weak. This paper reviews recent empirical evidence (since 2014), including findings from impact evaluations of a variety of NSA programs using experimental designs as well as observational studies that document linkages between agriculture, women’s empowerment, and nutrition. It summarizes existing knowledge regarding not only impacts but also pathways, mechanisms, and contextual factors that affect where and how agriculture may improve nutrition outcomes. The paper concludes with reflections on implications for agricultural programs, policies, and investments, and highlights future research priorities.
