The history of the Ancient Near East covers a huge chronological frame, from the first pictographic texts of the late 4th millennium to the conquest of Alexander the Great in 333 BC. During these millennia, different societies developed in a changing landscape where sheep (and their wool) always played an important economic role. The 22 papers presented here explore the place of wool in the ancient economy of the region, where large-scale textile production began during the second half of the 3rd millennium. This volume deals with the exploitation of animals at Sagalassos (SW-Turkey) during Roman and early Byzantine times (1st to 7th centuries AD). The archaeological excavations at this site yield large quantities of animal remains that represent mainly consumption refuse of its former inhabitants. The bones, teeth, and molluscs are described, as well as the various traces left by animals and man on these remains. The importance of herding versus hunting and fishing is discussed, as well as the composition of the livestock. An analysis of the mortality profiles, sex distributions, and pathologies allow inferences about the use of the domestic species as a source of meat or of secondary products (wool, dairy products, and animal power). Attention is paid to butchery practices, bone-working techniques, and to the use of animal remains as a means of reconstructing former trade connections. The former environment is reconstructed, using the habitat preferences of the identified species.

Economic archaeology is the study of how past peoples exploited animals and plants, using as evidence the remains of those animals and plants. The animal side is usually termed zooarchaeology, the plant side archaeobotany. What distinguishes them from other studies of ancient animals and plants is that their ultimate aim is to find out about human behaviour – the animal and plant remains are a means to this end.
