It is owing to this appreciation of its importance that the present work is being brought before its readers in the hope that it will prove useful to those engaged in this branch of public health work, and will satisfy a long felt want. Endeavour has been made to touch upon most of the conditions likely to be met in the slaughterhouse, and, as far as possible, the subject has been dealt with in simple terms, so that it may be more easily understood by those who have had no professional training in pathology. Long descriptions of bacteriological investigations have also been avoided. Those who wish to investigate this part of the subject more fully must refer to some of the larger books on bacteriology. It is hoped, however, that the remarks on bacteriology, which have of necessity to be included, will prove sufficient for the majority of those concerned with the inspection of meat. The work is not intended as a textbook on the subject, but rather as an aid to those who have to deal practically with the subject, such as meat inspectors, and students for the Public Health diploma. For this reason the statutory powers concerning the inspection of meat have been included. A summary of those most commonly in use is for convenience placed in the introduction.
