Excerpt from Women's National Agricultural and Horticultural Association Quarterly, 1914 String beans are picked in their prime, the strings, if any, are pulled out. Then they are washed and strung through the middle of the length and width of the bean with a needle and strong double white cotton or linen thread a yard and a half long. String them close together. Then they are put into boiling water for fifteen minutes, then hung up in the sun to dry. If you have poles a yard or more apart with nails nine to ten inches apart, and leave loops to your strings, they can easily be removed before the dew falls or in case of a shower. Protect from flies with gauze. Two or three sunny days will suffice to dry them. They shrivel and do not look very well, but fill up in soaking, which takes longer than if the beans were fresher.
