One who would never venture out on a chilly day without some extra covering to protect his lungs, seldom has any such regard for his stomach, nor hesitates irregularly and irrationally to introduce into this long-suffering organ all manner of articles fancied by his senses. The possession by man of a cultivated palate, of highly though delicately trained senses of taste and smell, and of an appetite peculiar to his species, which can be habituated to all kinds of unusual flavours and bizarre tastes, - in many instances with the development of a craving for them, - is not an unmixed blessing. Stimulation of the appetite with highly-flavoured foods diminishes the natural wish for food for its own sake, it tends towards living to eat, instead of eating to live. It is not only the wealthy and leisured who are guilty in this respect. The use of food accessories has largely extended throughout all classes. In the present volume an attempt has been made to describe in a brief compass the general laws governing digestive processes in all living bodies. A study of these processes as carried out in plants and in lower animals serves to indicate the modes and means by which living protoplasm in all vegetable and animal cells can most easily and economically procure a "living wage." The higher animals only differ physically from the lower in being formed of myriads of living cells which have as it were joined a "Trades Union" to enable them to assist each other in the most economical and thorough way, and have for the most part abandoned individualism. Excerpt from Observations Upon the Natural History of Epidemic Diarrhoea The causative agencies from which springs the plentiful harvest of child mortality in large cities may be conceived as a felted mass of rootlets almost inextricably intertwined. Those of poverty, bad housing, bad feeding, and neglect, may be severally recognized, but the extent of their interrelations with actual respiratory and alimentary disease - those to which the greater part of the mortality is referred - can be traced only with difficulty. It is the object Of this work to aid ln the labour of cutting away the matrix and entangling fibres and to lay bare the hidden ramifications of at least one important causative agency - epidemic diarrhoea. This affection - if we accept provisionally the more novel and generally favoured conception. As to its nature - is revealed as something very like an ordinary infectious disease, and one which permeates all classes, while the excessive mortality it gathers round itself in urban centres must be regarded as something superadded, owing to the vicious circle it forms with those baneful conditions of slum life mentioned above. On the other hand, its peculiarly intimate association with the circum stances of domestic life, from the continual faecal pollution of the interior of the household by infants and others, tends to make it more so than other affections of the kind peculiarly a class disease, and an especial scourge of dirty neighbourhoods. Dirty towns may however be saved from excessive mortality by a high percentage of breast feeding. A notable point in the interesting comparison that can be drawn between diarrhoea and typhoid fever is that, in accordance with their peculiarly opposite age-incidence curves, the marked and habitual depositing of infectious excreta within the household in the former disease may make the question of water-closet versus conservancy pan a matter of far less importance than in the latter. At first sight it may seem doubtful whether I have not exceeded proper whole volume to the consideration 0 Digest the more we conside of the states bodily organization, and, consequently, over our moral and intellectual nature, and the degree to which its morbid de rangements undermine health, happiness, and social useful ness, we shall become more and more convinced of the deep practical interest which attaches to a familiar acquaintance with the laws by which it is regulated, and of the necessity of entering into their examination at sufficient length to ensure the ready applicability of our knowledge in our general con duct.
