Book Description
Developments in Food Quality and Safety Series is the most up-to-date resource covering trend topics such as Advances in the analysis of toxic compounds and control of food poisoning; Food fraud, traceability and authenticity; Revalorization of agrifood industry; Natural antimicrobial compounds and application to improve the preservation of food; Non-thermal processing technologies in the food industry; Nanotechnology in food production; and Intelligent packaging and sensors for food applications. Volume 4, Food Industry 4.0: Emerging Trends and Technologies in Food Production and Consumption covers several technologies (e.g., robotics, smart sensors, artificial intelligence, and big data) at different development and research levels in order to provide holistic multidisciplinary approaches that embrace simultaneously as many Industry 4.0 technologies as possible, reflecting the long journey of food from farm (or sea) to fork. Chapters explore automation, digitalization, and green technologies, besides food quality, food safety food traceability, processing and preservation 4.0. Topics such as smart sensors, artificial intelligence and big data revolution, additive manufacturing, and emerging food trends are also explored. The series is edited by Dr. José Manuel Lorenzo and authored by a team of global experts in the fields of Food Quality and Safety, providing comprehensive knowledge to food industry personals and scientists. - Provides a comprehensive view of Industry 4.0 technologies as applied to the food industry - Covers the most trend topics related to novel foods in the light of emerging innovations and developments - Discusses how implementing innovative technologies holds significant potential to increase efficiency and value added, save time and cost, and increase profitability in various food sectors

Book Description
Food-scanners are novel, portable and miniaturized devices, which operate on the principle of near-infrared spectroscopy (NIRS). According to the manufacturers, these devices are suitable for measuring a wide range of important quality parameters on fresh produce. This research evaluated the suitability of food-scanners for determining fruit quality along the supply chain of fruit and vegetables. Using the qualitative research approach, the first step of this research comprised interviews of experts at different positions along the fresh produce value chain in Germany. Thereby, preferences and concerns regarding the utilization and implementation of this technology for fresh produce were investigated. Based on these findings, non-destructive prediction models for various important quality characteristics and secondary plant constituents were developed using the model fruit tomato. In addition, food-scanner predictions of relevant quality traits on a wide range of produce from the fruit and vegetable assortment were examined. The evaluations showed a high degree of conformity between the results of non-destructive food-scanner predictions and conventional destructive measurement methods. The results illustrate the great potential of these novel devices for the application in everyday practice of fruit quality control along the fresh produce supply chain.

Book Description
Over the past few decades, exciting developments have taken place in the field of near-infrared spectroscopy (NIRS). This has been enabled by the advent of robust Fourier transform interferometers and diode array solutions, coupled with complex chemometric methods that can easily be executed using modern microprocessors. The present edited volume intends to cover recent developments in NIRS and provide a broad perspective of some of the challenges that characterize the field. The volume comprises six chapters overall and covers several sectors. The target audience for this book includes engineers, practitioners, and researchers involved in NIRS system design and utilization in different applications. We believe that they will greatly benefit from the timely and accurate information provided in this work.
