Ce travail de thèse se consacre à l'étude de molécules, de matériaux et de nano objets à propriétés optiques non linéaires (ONL) quadratiques. Dans un premier temps, nous avons étudié un polymère électro optique à base de polyméthacrylate de méthyle greffé par un nouveau colorant non linéaire. Une susceptibilité non linéaire de 43pm/V a été obtenue par génération de second harmonique à 1,91 ltm ; nous l'avons comparée à la valeur calculée à partir du modèle de Langevin sur l'orientation de dipôles sous champ électrique. Dans un deuxième temps, nous nous sommes intéressés à des complexes métalliques et organométalliques, en étudiant la possibilité de commuter leur hyperpolarisabilité, soit par modification de la longueur de conjugaison des ligands sous irradiation optique (photochromes), soit par transformation du caractère redox des donneurs ou des accepteurs d'électrons dans un système conjugué unidimensionnel. Enfin, nous avons étudié les propriétés ONL de dérivés du 4 diméthylamino N méthyl 4 stilbazolium tosylate (DAST), et en particulier la possibilité d'exalter leur hyperpolarisabilité par des nanoparticules d'or. Des mesures de diffusion harmonique de la lumière ont permis de mettre en évidence une nette augmentation de l'hyperpolarisabilité (d'un facteur 2) par molécule de dérivé de DAST, en régime non résonant, en présence de nanoparticules d'or, qu'elles soient attachées à cette molécule ou simplement mélangées avec elle dans un solvant commun
