Dans ce contexte, les contraintes règlementaires, combinées aux chartes de formulation restrictives que s'imposent certaines marques, ont permis l'émergence d'un fort mouvement d'innovation. Ainsi, les nouveaux modes de conservation alternatifs, mettant en jeu notamment une production en milieu stérile et des conditionnements protecteurs permettant de diminuer voire de supprimer complètement l'usage des conservateurs, pourraient constituer une réponse à cette problématique.
