Ce dictionnaire contient les teneurs en matières insaponifiables (et en huiles) d'un grand nombre d'huiles végétales (environ 550 espèces oléagineuse traitées) accompagnées des méthodes utilisées par les auteurs des résultats lorsqu'elles ont été précisées. Chaque espèce végétale y est classée par ordre alphabétique. Il contient aussi des teneurs de familles chimiques de constituants insaponifiables (stérols, 4-méthylstérols, alcools tritépéniques, tocophérols, tocotriénols, caroténoïdes ...) ainsi que les constituants très majoritaires (> 40 %) des familles insaponifiables, dans un certain nombre d'huiles végétales. En outre, des annexes indiquent : les correspondances entre : synonymes utilisés par les auteurs des travaux répertoriés et les noms latins valides en 2010 ; noms français et noms latins ; noms anglais t noms latins ; les structures des constituants chimiques cités, classés par famille. Huiles végétales : teneurs en matières insaponifiables s'inscrit dans le prolongement du "Nouveau dictionnaire des huiles végétales" d'Eugène Ucciani, paru en 1995 chez le même éditeur, en le complétant largement sur le nombre d'huiles étudiées et en présentant les familles chimiques consituant l'insaponifiable. Il s'appuie sur 655 références bibliographiques dans plus de la moitié parues après 1994. Ce dictionnaire s'adresse aux développeurs et ingénieurs d'entreprises utilisatrices d'huiles végétales (cosmétique, agroalimentaire, laboratoires pharmaceutiques) et d'entreprise fabriquant ou transformant les huiles végétales, ainsi qu'aux laboratoires de contrôles et aux experts chargés de normalisation sur les matières premières oléagineuses.
