The effectiveness of a three-hour nutrition education workshop for home economics teachers given in 18 locations in Oregon was evaluated based on responses from 138 teachers. Changes in knowledge of and attitude toward four nutrition topics (fast foods, vegetarianism, weight control, and food exchanges) were measured using questionnaires completed at the beginning of the workshop, at the end of the workshop, and one month later. Teacher background, teacher reaction to the workshop, and incorporation of workshop material into the classroom were also assessed. Statistically significant positive changes were found in both knowledge and attitude immediately after the workshop. These changes were retained to a significant degree one month later in all areas of knowledge but for only two areas of attitude (fast foods and food exchanges). Change in knowledge was not found to be related to the number of years employed, the academic degree, the length of time since a college nutrition course had been taken, the teacher's source of recent nutrition information or previous workshop attendance. Most of the teachers (88-99%) found the workshop useful, the right length of time, and at a convenient hour. Over half (51%) of the teachers who returned the final questionnaire indicated they had used workshop material in their classroom within the month following the workshop. Similar results were found when responses from 76 non-home economics teachers, who also attended the workshop, were analyzed for changes in knowledge and attitude.

Presently, no standard nutrition education method regarding knowledge, behavior, and confidence for veterans with a spinal cord injury or spinal cord disorder (SCI/D) has been defined. The VA established the Healthy Teaching Kitchen (HTK) program to provide opportunities for veterans to learn about healthy eating. The objective of this study was to determine whether a HTK approach to educate veterans with a SCI/D regarding nutrition knowledge, behavior and confidence was more effective than a Standard Nutrition Education (SNE) class alone. A single-blind randomized controlled trial was performed on veterans with a SCI/D who receive care at the Clement J. Zablocki VA Medical Center. A total of 23 participants were randomized into class (A) HTK (n = 13) or (B) SNE (n = 10) and completed pre- and post-questionnaires to assess nutrition-related aspects. Results of the study indicate significant outcomes of those who participated in the HTK with regard to USDA MyPlate diagram knowledge (p = .03). While no statistically significant results existed in this study, conclusions indicate that a hands-on education class warrants positive outcomes in the SCI/D population. Future studies should include a larger sample size and outcomes tracking to determine effectiveness of the HTK initiative in the VA.

Abstract: Nutrition education lessons are an effective tool to deliver positive health-related messages. However, there is insufficient research to support how parent docents improve the dietary habits of children. Torrance Unified School District offered a nutrition education program called Healthy Ever After (HEA). The HEA Program enlisted the use of parent docents to deliver nutrition education lessons to elementary school-aged children (grades K-6). Prior to delivering nutrition education lessons, the parent docents were required to attend pre-program lessons to learn about the curriculum and have all the knowledge and tools provided to them. This purpose of this study was to describe self-reported improvements in self-efficacy and knowledge to provide nutrition education to school-aged children among parent docents completing pre-program training lessons as part of the HEA intervention. An online questionnaire was created using the Qualtrics website. Participants were recruited by both the coordinator of the HEA program and the study researcher through e-mail messages and in-person, respectively. The minimum number of participants (n = 20) were met to complete this study. All of the participants identified as female, and the eligibility requirements were met. Participants identified with being satisfied with their experience with the pre-program lessons of HEA and reported improved confidence and abilities to conduct nutrition education lessons for children. Although the pre-program lessons improved confidence and abilities, some of the participants found the role of acting as parent docent to be challenging. It is important to note that all the participants found the workload as a parent docent to be manageable.
