Celiac disease (CD) is an immune-mediated enteropathy triggered by the ingestion of gluten-containing grains (including wheat, rye and barley) in genetically susceptible individuals. In Ways of Nature, Dr. Décossard articulates the first theory of evolution since Darwin. By his own account, he stumbled upon his proposed mechanism of eukaryogenesis using a process worthy of the three princes of Serendip.
