Book Description
Excerpt from The Nutrition of Man The present book is the outcome of a course of eight lec tures delivered before the Lowell Institute of Boston in the early part of 1907. In this presentation of the subject the attempt has been made to give a systematic account of our knowledge regard ing some of the more important processes of nutrition, With special reference to the needs of the body for food. In doing this, the facts accumulated by painstaking observations and experiments during recent years in our laboratory have been incorporated With data from other sources and brought into harmony, so far as possible, with the modern trend of physi ological thought. Numerous experimental results, hitherto unpublished, have been introduced, notably in Chapter VII, in Which a few of the data recently obtained in our laboratory With dogs are presented in some detail, Since they afford evidence of the error of the current arguments concerning the necessity of a high proteid intake by man, as based on the results of earlier investigators With high proteid animals. It is hoped that the facts and arguments here presented Will help to arouse a more general interest in the subject of human nutrition, as right methods of living promise so much for the health and happiness of the individual and of the community. Book Description
Excerpt from Principles of Human Nutrition: A Study in Practical Dietetics AN examination of this volume will at once make it evident that it was not prepared for use with students who have specialized in organic and biological chemistry. The object in view was rather such a presentation of the subject matter related to human nutrition as would be more or less adapted to popular use, but particularly to instruction of students with moderate scientific acquirements, whether in colleges, secondary schools, short courses, schools of domestic science, or correspondence schools. The reliable knowledge bearing on the nutrition of man is mainly to be found in elaborate works on physiology and physiological chemistry, the contents of which are not generally available. More over, the highly technical facts are usually not centered around a philosophy of living. The aim here has been to show the adjustment of this knowledge to a rational system of nutrition without insisting upon adherence to technical details that are not feasible in the ordinary administration of the family dietary. It is needless to state that the author makes no claim to having written on his own authority, but, on the other hand, he has relied upon the conclusions of those authorities and investigators whose sound scholarship in this field of knowledge is unquestioned. The following literature is that which has mainly been considered: Metabolism and Practical Medicine, Von Noorden; trans lated by J Walker Hall. d104book of Physiological Chemistry, Abderhalden; translated by William T. Hall. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Find more at www.forgottenbooks.com This book is a reproduction of an important historical work. Book Description
Excerpt from Food of Man Studies The advantages of a mixed diet are here well illustrated. That the digestive power is in part an individual characteristic is also well shown, since the subject S. In every period digested the largest proportion of the protein, and in every case but one D. Digested the least. The protein of the corn was less digesti ble than that of the milk, and when the results are calculated to the corn alone, only per cent of the protein was found to be digested.
