The number of articles on protein extraction appearing in the literature is increasing rapidly, indicating that protein has been extracted from such materials as alfalfa, soy beans, wheat and other cereal grains. Research is underway in a number of laboratories to determine the properties of these protein concentrates and to find their most efficient application in the preparation of foods for human consumption.
