Thus, potatoes averaged about 40 percent of the fresh and 43 percent of the processed vegetable tonnage in the United States in 1959 and 1960. Average u.s. Production of potatoes remained at around million tons from 1950 to 1960. Production in the 11 western States, however, increased 26 percent, or to million tons. The large st increases in production were in Idaho, Washington, and Oregon; part of the increase probably can be attributed to the increase in pro ces sing of potatoes in Idaho and Washington. The utilization of potatoes in the United States has changed rather sharply since 1940. About 25 percent of the potatoes used for food were processed in 1960 compared With less than 2 percent in 1940. Per capita consumption of processed potatoes has increased while fresh has declined.
