Category : Technology & Engineering
Languages : en
Pages : 892
Book Description
A comprehensive volume providing broad and detailed coverage of marine mussels Marine Mussels: Ecology, Physiology, Genetics and Culture provides readers with in-depth, fully up-to-date information on all major aspects of marine mussels. Written by an internationally renowned expert in the field, this authoritative volume addresses morphology, ecology, feeding, phylogeny and evolution, reproduction and larval development, settlement and recruitment, genetics, disease, management of culture systems and more. The Food Lab: Better Home Cooking Through Science
Author: J. Kenji López-Alt
Publisher: W. W. Norton & Company
ISBN: 0393249867
Category : Cooking
Languages : en
Pages : 1768
Book Description
Over 1 Million Copies Sold A New York Times Bestseller Winner of the James Beard Award for General Cooking and the IACP Cookbook of the Year Award "The one book you must have, no matter what you’re planning to cook or where your skill level falls."—New York Times Book Review Ever wondered how to pan-fry a steak with a charred crust and an interior that's perfectly medium-rare from edge to edge when you cut into it? How to make homemade mac 'n' cheese that is as satisfyingly gooey and velvety-smooth as the blue box stuff, but far tastier? How to roast a succulent, moist turkey (forget about brining!)—and use a foolproof method that works every time? As Serious Eats's culinary nerd-in-residence, J. Kenji López-Alt has pondered all these questions and more. In The Food Lab, Kenji focuses on the science behind beloved American dishes, delving into the interactions between heat, energy, and molecules that create great food. Kenji shows that often, conventional methods don’t work that well, and home cooks can achieve far better results using new—but simple—techniques. In hundreds of easy-to-make recipes with over 1,000 full-color images, you will find out how to make foolproof Hollandaise sauce in just two minutes, how to transform one simple tomato sauce into a half dozen dishes, how to make the crispiest, creamiest potato casserole ever conceived, and much more.

Marine Products of Commerce
Author: Donald Kiteley Tressler
Publisher:
ISBN:
Category : Commercial products
Languages : en
Pages : 776
Book Description
Excerpt from preface: This book is designed for both the scientific and the practical man. It attempts to give the chemist and biologist a general survey of the fishery industries, pointing out their relative importance, indicating their location, and describing the methods in common use. There has been no attempt to consider all the methods of the fisheries; if this were attempted, a lengthy treatise such as G. Brown Goode's "Fisheries and fishery industries of the United States" would result. By reading this book, the practical man may learn how chemistry and biology are correlated with the fishery industries. Simple language is used throughout. But few technical terms are included and care is taken to define those terms which may not be familiar to the layman. The author hopes that this book may fill the long felt need of the student of industrial biology, for a concise treatise on the fishery industries. These industries have been considered from a scientific viewpoint and, while it is impossible to go into great detail in describing the applications of chemistry, physics, and biology in the preparation and preservation of marine products, the applications are outlined and references to the original literature are given which should serve as a guide for study. In all cases, special consideration is given to American methods and processes. Obviously, it is impossible to treat of the technology of the marine products industries in all parts of the world; however, especially important foreign industries are described. A special effort is made to describe carefully the manufacture and refining of solar sea salt. It is hoped that the information presented will be of value not only to the student of industrial chemistry and the marine industries but also to the salt manufacturer. It is hoped that the book may call attention to the great need for chemical and biological research to solve the numerous problems of the fishery industries. Several of these problems are brought to the attention of the reader in the last chapter.

Reviews of Environmental Contamination and Toxicology
Author: George W. Ware
Publisher: Springer Science & Business Media
ISBN: 1461219582
Category : Science
Languages : en
Pages : 180
Book Description
International concern in scientific, industrial, and governmental communi ties over traces of xenobiotics in foods and in both abiotic and biotic envi ronments has justified the present triumvirate of specialized publications in this field: comprehensive reviews, rapidly published research papers and progress reports, and archival documentations. These three international publications are integrated and scheduled to provide the coherency essential for nonduplicative and current progress in a field as dynamic and complex as environmental contamination and toxicology. This series is reserved ex clusively for the diversified literature on "toxic" chemicals in our food, our feeds, our homes, recreational and working surroundings, our domestic animals, our wildlife and ourselves. Tremendous efforts worldwide have been mobilized to evaluate the nature, presence, magnitude, fate, and toxi cology of the chemicals loosed upon the earth. Among the sequelae of this broad new emphasis is an undeniable need for an articulated set of authoritative publications, where one can find the latest important world literature produced by these emerging areas of science together with docu mentation of pertinent ancillary legislation. Research directors and legislative or administrative advisers do not have the time to scan the escalating number of technical publications that may contain articles important to current responsibility. Rather, these individu als need the background provided by detailed reviews and the assurance that the latest information is made available to them, all with minimal literature searching.
