La connaissance des mécanismes turbulents au sein des canaux ondulés est à ce jour encore limitée malgré les travaux réalisés dans la dernière décennie, d'une part, à cause de la complexité des facteurs géométriques et des faibles dimensions qui rendent des expérimentations difficiles, et d'autre part, le comportement de l'écoulement turbulent est assez mal connu dans des géométries confinées. Ce travail de thèse s'intéresse au rôle joué par la turbulence au sein du canal ondulé et à son influence sur le transfert de la chaleur. Pour cela, l'écoulement dynamique est caractérisé finement à travers les champs moyens et les moments d’ordre deux grâce aux mesures par PIV (rapide et standard) et aux simulations des grandes échelles (LES). La quantification du transfert de chaleur est obtenue par thermométrie par thermocouples fins pariétaux tandis que les champs de température sont décrits par LES. L'ondulation induit le comportement moyen de l'écoulement. En effet, les composantes longitudinale et transversale sont périodiques, tandis que la composante verticale est liée au confinement. En régime établi, l'écoulement présente des zones spécifiques : une couche de cisaillement est générée en aval du sommet, et s'accompagne de fortes fluctuations longitudinale et transversale corrélées; le développement de cette couche s'opère dans la partie concave de l’ondulation (appelée le creux) ; puis elle vient impacter en aval du creux où se manifeste une augmentation significative des fluctuations verticales. L'analyse du bilan d'énergie cinétique turbulente a mis en évidence un comportement complexe : la production est liée à la couche de cisaillement, la dissipation s'effectue dans le creux, mais une partie d'énergie est convectée ou diffusée vers la paroi et vers l'écoulement central. Bien que les fluctuations thermiques les plus importantes soient localisées dans la couche de cisaillement, le transfert de chaleur maximum se manifeste dans la zone d’impact. Pour compléter l'étude, des travaux expérimentaux et numériques ont été menés pour différents écartements entre parois, et différentes amplitudes d'ondulation. Ces résultats ont permis de mieux appréhender le rôle de ces paramètres et de quantifier leur influence sur le comportement dynamique et sur le transfert thermique : l'augmentation de l'intensité de turbulence et du transfert de chaleur est obtenue avec un écartement plus grand ou une amplitude plus forte. Ces résultats sont essentiels pour optimiser les performances des intercalaires ondulés dans les échangeurs de chaleurs compacts.
