Nutrition education can also provide information on the globalization of the U.S. food system that will assist students to understand how and why the food system is changing in their home countries. Effort may also be made to help them bring back environment friendly practices (e.g. eating local food, farmers markets) to their home countries, so that they may educate their fellow citizens, and contribute, where appropriate, to food policy discussions within their home countries.

This project focuses on the short and long-term impacts of an experiential travel course, 'Living Rural Communities and Environments', that has been delivered through the University of Manitoba in the nearby rural community of Clearwater since 2006. The course is tremendously popular and about half of the students who have taken the course are international students, most of these from China. The goal of this research was to explore the implications of experiential education and community service-learning for international and especially Chinese students. In addition, how and what degree at attitude and behaviors for such students were affected by this intensive experiential learning course was explored. The methods involved focus group interviews with students who took the course in 2017 and 2018, interviews with community instructors, and an online survey consisting of Likert scale, multiple choice and open-ended questions that was distributed to all international students who have taken the course since 2006. Experiential education was found to be a highly effective method of conveying knowledge to and engaging students with the course material. The course had longstanding impacts on student attitudes and behaviours including the knowledge of food systems, consumption or local and organic foods, and attitudes and awareness of the inequity faced by Indigenous people in Canada. The influence of experiential learning on Chinese students was especially profound because of the effective absence of outdoor and experiential learning experiences in China. This research helped us better understand the unique experiences of Chinese and other international students in this travel course in comparison to other university courses that have been taken. It also helped maintain and strengthen contacts between these past international students and other students as well as with instructors and community members.

Gender and Food in Transnational East Asias illustrates how the production and consumption of food encapsulates the changes that affect social positions of women and men and their relationships with their families, the state, and their work, as well as shapes their gender, sexual, ethnic, and national identities. The transnational movement of food and people between East Asia and the rest of the world is increasingly visible, forming various forces behind the cultural and political constructions of gender politics among and beyond Asian diasporas. By critically engaging with history, practices, and representation of food as a constructive window to articulate gender dynamics in the East Asian region, this volume approaches food as a symbolic and material site where gender roles and identities are imagined, performed, and negotiated. Examines the ways our conceptions of Asian American food have been shaped Chop suey. Sushi. Curry. Adobo. Kimchi. The deep associations Asians in the United States have with food have become ingrained in the American popular imagination. So much so that contentious notions of ethnic authenticity and authority are marked by and argued around images and ideas of food. Eating Asian America: A Food Studies Reader collects burgeoning new scholarship in Asian American Studies that centers the study of foodways and culinary practices in our understanding of the racialized underpinnings of Asian Americanness. It does so by bringing together twenty scholars from across the disciplinary spectrum to inaugurate a new turn in food studies: the refusal to yield to a superficial multiculturalism that naively celebrates difference and reconciliation through the pleasures of food and eating. The French epicure and gastronome Brillat-Savarin declared, "Tell me what you eat, and I will tell you who you are." Wenying Xu infuses this notion with cultural-political energy by extending it to an ethnic group known for its cuisines: Asian Americans. She begins with the general argument that eating is a means of becoming—not simply in the sense of nourishment but more importantly of what we choose to eat, what we can afford to eat, what we secretly crave but are ashamed to eat in front of others, and how we eat. Food, as the most significant medium of traffic between the inside and outside of our bodies, organizes, signifies, and legitimates our sense of self and distinguishes us from others, who practice different foodways. Narrowing her scope, Xu reveals how cooking, eating, and food fashion Asian American identities in terms of race/ethnicity, gender, class, diaspora, and sexuality. She provides lucid and informed interpretations of seven Asian American writers (John Okada, Joy Kogawa, Frank Chin, Li-Young Lee, David Wong Louie, Mei Ng, and Monique Truong) and places these identity issues in the fascinating spaces of food, hunger, consumption, appetite, desire, and orality. Asian American literature abounds in culinary metaphors and references, but few scholars have made sense of them in a meaningful way. Most literary critics perceive alimentary references as narrative strategies or part of the background; Xu takes food as the central site of cultural and political struggles waged in the seemingly private domain of desire in the lives of Asian Americans. Eating Identities is the first book to link food to a wide range of Asian American concerns such as race and sexuality. Unlike most sociological studies, which center on empirical analyses of the relationship between food and society, it focuses on how food practices influence psychological and ontological formations and thus contributes significantly to the growing field of food studies. For students of literature, this tantalizing work offers an illuminating lesson on how to read the multivalent meanings of food and eating in literary texts.

This study examined the influences of anxiety, health information seeking behavior, cross-cultural loss on satisfaction with life among 186 East Asian international students while studying abroad in the U.S. The results showed that general and health anxiety are both significantly associated with satisfaction with life, while there is a positive association between health anxiety and Internet health information seeking behaviors. Internet health information seeking behavior also mediated the link between health anxiety and satisfaction with life in the U.S. Cross-cultural loss did not moderate the relationship between Internet health information seeking behavior and satisfaction with life as predicted. Results of this study provide additional knowledge about East Asian international students' health, including the connection between general and health anxiety, Internet health information seeking behavior, and satisfaction with life. Findings from this study may have implications for higher education institutions serving international students.

In the United States, some populations suffer from far greater disparities in health than others. Those disparities are caused not only by fundamental differences in health status across segments of the population, but also because of inequities in factors that impact health status, so-called determinants of health. Only part of an individual's health status depends on his or her behavior and choice; community-wide problems like poverty, unemployment, poor education, inadequate housing, poor public transportation, interpersonal violence, and decaying neighborhoods also contribute to health inequities, as well as the historic and ongoing interplay of structures, policies, and norms that shape lives. When these factors are not optimal in a community, it does not mean they are intractable: such inequities can be mitigated by social policies that can shape health in powerful ways. Communities in Action: Pathways to Health Equity seeks to delineate the causes of and the solutions to health inequities in the United States. This report focuses on what communities can do to promote health equity, what actions are needed by the many and varied stakeholders that are part of communities or support them, as well as the root causes and structural barriers that need to be overcome.
