La notion de catégorie cognitive joue un rôle important dans l'étude du comportement de l'acheteur et du consommateur. Pour en appréhender clairement les incidences théoriques et opérationnelles, il a été préalablement nécessaire de formuler un modèle général du comportement de l'acheteur. Celui-ci s'appuie sur les modèles proposés en sciences cognitives. Les différents travaux discutés lors de cette synthèse ont pour objectif d'apprécier le rôle d'une approche catégorielle lors des activités cognitives des acheteurs et consommateurs. Elle est exploitée tout d'abord pour discuter l'organisation catégorielle des connaissances (concepts catégoriels associés aux marques et structuration cognitive de l'offre), puis pour apprécier le rôle des catégories cognitives sur les activités de jugement (utilisation du jugement de typicalité pour l'évaluation de marque et comme heuristique de choix) et enfin pour poser les conséquences de l'organisation catégorielle des stimuli sur l'activité cognitive et comportementale.
