This thesis analyses food quality in general and pork quality in particular from the consumer’s perspective, combining consumer behaviour research and the economics of information approach. Based on the assumption that consumers’ stored quality information is activated at the point of sale to perceive quality and make purchase decisions the theory of cognitive structures was applied. To uncover stored information the approach of concept mapping was used to investigate which pork quality information are stored in consumers’ memory. Therefore, 260 private households were interviewed in 2004 with regard to pork consumption patterns and quality perception. Results show that consumers relate intrinsic quality cues strongly with experience quality attributes and extrinsic quality cues strongly with credence quality attributes. In 2005 a second survey was accomplished at the point of sale (n=767) to investigate the impact of quality information used by consumers to make the pork purchase decision. Results show that at the point of sale the extrinsic quality cue ‘seal of approval’ is used if consumers purchase their pork at small supermarkets, use household leaflets to make purchase decisions, are older customers and have a higher income level. Overall, the thesis is of practical relevance for the agribusiness as the results assist food industry and food retailers to offer consumer-oriented food quality.

Food credence attributes are food features that are difficult to verify even after consumption. Consumers, today, are concerned about many food credence attributes, including animal rights, contamination risk, fair trade practice, genetic modification, geographical origin, and organic farming. For the past several decades, many scholars have analyzed the value consumers place on credence attributes and have reported that consumers will pay a premium for foods with these desirable properties. In addition, their studies reveal that individual consumers place greater importance on some credence attributes than others. In the fall of 1990, the Danish government started a comprehensive research pro gramme to improve the competitiveness of the Danish food sector: The Research and Development Programme in the Danish Food Sector (Det F!Ildevareteknologiske Forsk nings- og Udviklingsprogram, F0TEK). The programme was based on a combination of basic research to be carried out by universities and other research institutions, and a series of collaboration projects between researchers and food companies. The programme was originally designed as a technological research programme. However, in the planning phases of the research programme, the view that the development of new technologies and products may not be sufficient to improve competitiveness made some ground. A small comer of the overall research effort was therefore set aside for market-oriented research. This comer was filled by the research programme Market-based process and product innovation in the food sector (MAPP). MAPP was a joint research programme in which researchers from several Danish universities and business schools participated; it was coordinated by the Aarhus School of Business. MAPP set out to achieve a difficult task: to conduct high quality research on various aspects of the marketing of food products, to do so in cooperation with food companies, and to win under standing and recognition from the colleagues in the food technology departments.

The issue of Differences in Composition of Seemingly Identical branded Products (DC-SIP) refers to cases where a good in one Member State is marketed as identical to a good marketed in other Member States, while in reality that good has significantly different composition or characteristics (European Commission, 2019a). The main concern is that "in some parts of Europe, people are sold food of lower quality than in other countries, despite the packaging and branding being identical", as stated by President Juncker (European Commission, 2017b). This report provides a conceptual analysis of whether and how consumer purchasing decisions and welfare are affected by the fact that the same brand owner offers seemingly identical branded food products with different composition in different countries' markets. Based on the conceptual and empirical knowledge developed in the fields of demand theory, behavioural economics, marketing and consumer psychology, this report develops a framework to analyse the formation of consumer quality perceptions, purchasing decisions and welfare. We start from a basic neoclassical utility approach to assess the different possible effects of DC-SIP on consumer purchases and welfare. Given the crucial role of quality perception in determining consumers' valuation of a product, we then perform a more detailed analysis of the factors shaping quality perception, based on the Total Food Quality Model. This sheds light on how food quality perception may differ across countries and individual consumers, and how this relates to the issue of DC-SIP. Finally, the report addresses how information asymmetry regarding DC-SIP may lead to the disconfirmation of consumers' expectations once consumers realise or are informed about differences in composition between product versions. The role of deception and unfairness perception on consumer decision-making and welfare is analyzed in order to understand consumers' reactions to DC-SIP.
